Feb 6th is a very special day….One of the most memorable days in my life..And this year my lil Angel is one year old!I can’t believe it!One year went away so fast!It was just like yesterday that I was in the hospital tensed and knowing that my world has grown bigger and its going change forever.


I remember holding a screamy and wriggly baby in my arms and wondering how I was going bring her up.The day we came home from the hospital was the scariest.As a health educator I have counselled new mothers on what to do when something happens but that day I was so tired and lil Angel was constantly crying and there I was holding her looking lost.Mom to the rescue -as usual.She took lil Angel in her arms and gently rocked her and sang a lullaby and there she was in mom’s arm,sleeping like an angel..Phew….


Then came the other things like nappy changes,vaccination schedule,switching over to weaning foods,those sudden tummy cramps,wondering why she was crying,carrying a big bag with baby food and other things she would need every time we went out, and a whole lot more[Let me spare the other details :)]


Oh, then there are some compensations -the cute toothless smile,the little cuddle,the soft touch,the first time she called me ‘mamaa'[Oh chooo chweeet],when she said ‘yum yum yum’ the day I fed her a bit of Carrot halwa,smiles in her sleep,her baby talk -all these sure brightens my day….


I thought bringing up a baby was no big deal because at that time she used to take her feeds and sleep..I could do so many thing,most important of all I could blog.She was such a darling and would just lie down and coo and I would talk to her while working on the blog.




Then she started crawling..The whole house was her territory.When you say ‘Don’t go there’,she understands it as ‘Go there’ and has her share of fun.So I was constantly running behind her most of the time.Then came the time when she stood holding the furniture and started walking.Do I have to tell you what happens?You can guess that…


She is getting prettier and naughtier by the day and that’s how baby’s are..I enjoy every minute with her though sometimes I pretend to scold her telling her that she would get a good smack from me but I don’t think I will ever do that just because she is naughty.[Did anyone say – ‘spare the rod and spoil the child’..?]



Now coming to the celebration part,we are celebrating her 1st b’day for the second time!!The first one was according to the Chinese calender and it was on 25th Jan 2009,a day before the Chinese spring festival.Our dear friend had ordered a beautiful fruity cake for Lil Angel and we celebrated her b’day in my friends home where we were invited for the spring festival. Lil angel was so excited and was jumping up and down when everyone started feeding her bits of the creamy cake..So looked so adorable!!!

Okay…If you are new to my blog, let me tell you that I don’t have a one year old at home right now.No, this is not a story either. If you are my regular reader, friend, please don’t be confused, let me clear up things for you…

My darling Angel is celebrating her 6th birthday today.The things that you read just now was written for her first b’day which we celebrated while living in China. I was planning to post it soon after we celebrated her birthday but since we traveled down to India I forgot about this post completely.

A few days back when I was going through the drafts, I saw this one and recollected those lovely moments! I am experiencing all what I had written once again through this post,and more lively through Lil Dude and his antics.

The two kids sure do make my day with their smiles, hugs ,kisses and the affection they shower on me unconditionally.All this coupled with their naughtiness and occasional tantrums makes life worth living!

Before you get bored, let me show you the cake that I baked for Lil Angel’s birthday.

Ever since I showed the pic that  Veena had sent, Lil Angel told me with all eagerness that she wanted the kitkat cake for her b’day. I was more than glad to bake it for her.My blogging marathon buddies were so encouraging and joined in my enthusiasm of baking this cake  and the master bakers of the group readily clarified my doubts.Thanks Nandini and Veena ๐Ÿ™‚

Actually it is a very simple cake yet looks so sinfully gorgeous! You can bake the cake in advance and just assemble it later.

Here is how you make this sinful cake…

I used:

Baking pan size – 5 inch X 5 inch

All purpose flour – 1 1/2 cups
Cocoa powder- 3 tablespoons
Sugar – 3/4 cup, powdered
Oil-1/4 cup
Water- 1 cup
Vinegar-1 tablespoon
Salt- 1/4 teaspoon
Vanilla essence -1 tablespoon
Baking soda-1 teaspoon
Kit-Kat Bars- 14 -2 units ones
Gems /M & M’s – 10 -11 grams packets
Strawberry flavored lollipops- 6
Chocolate frosting  as needed

There is how to go about making it….

Grease and dust a square baking pan.Keep aside.Sift together the baking soda, cocoa powder and all purpose flour. In a bowl mix water, oil, vinegar,salt and sugar.Mix well till the sugar dissolves completely.

Add the sifted flour in batches and mix so that there are no lumps.Do not over mix though. Pour half the batter into the prepared tin and tap gently on the counter to remove air bubbles. I missed this step!Bake at 180 degree C for 20 minutes or till cake is done.

Once the cake is baked, let it sit in the tin for 10 minutes and slowly invert it onto a wire rack. In the same pan bake the other portion of the batter. Let both the cakes cool completely.

Using a serrated knife, cut out the top portion of the both the cakes so that it is flat. Apply the chocoalte frosting on the cut surface of one of the cakes.

 Place the  other piece of cake over the frosting, cut surface facing down. Press gently and apply the frosting all over the cake. Gently transfer the cake onto to a serving plate.Take the kit kat chocolates and place them all around the frosted cake

Secure them with a ribbon. Drop in gems / M & M’s . Add the lollipops.

When I was assembling this cake, I was more excited that Lil Angel would be when she saw the cake!!

Note:

  • You can use any chocolate cake recipe for this.You can even use the basic vanilla recipe.
  • You can also use a round pan.
  • The cake is mildly sweet on its own and with the frosting and all those chocolates, its really sweet!
  • Oven timings will vary so look out for ‘doneness’ after 15 minutes.
  • And now to the most important not-A word of caution!Do not let your kids help you assemble this cake! All those chocolates are bound to disappear before you can even realize they are gone!And you have to have a bit of self control trying to stop yourself from popping one of those chocolates into your mouth ๐Ÿ™‚

We got her a flower press kit along with the other things she wanted for her birthday….

The moment Lil Angel got back from home, she searched for the cake and with all seriousness I told her I was not able to make it as I had been busy the whole day. Lil Angel said she would eat the kit kat that we got yesterday along with the cake her dad would get for her.

When her dad came home empty handed, she said she would just have the kit kat alone but I was sure there was some disappointment in her face. Not wanting to make her feel sadder,I got out the cake from its hiding place and she was so happy! She hugged me and that was more than enough to tell me how she felt.

Just as I had expected, the kids were busy pulling off the kit kat and the lollipop. The cake is yet to be tasted!

It was a beautiful birthday with my parents coming over and we all had dinner at home. The kids had a fantastic time….

    My oldest turned 30 on the 5th, I can't believe he is 30, it goes by so fast.
    I didn't get to bake him a cake this year he is away till Spring, but I know the cake he will love when he returns.
