I baked this one after seeing the photo that Aparna posted on Instagram. I was literally tempted to grab a few off the screen.Yes, they looked so tempting.


Finally I made this just before Christmas but could not post it back then. So now is the right time as this is the final post for post for Blogging Marathon # 60,Week 3 , Day 3 with the theme Baked snacks for kids.

This  cookie has such a great texture as we use ghee to bring
the dough together and since we are using ghee you can imagine how
delicious these will taste.The kids loved them to the core and the whole
batch got over within a day!!

I used:
Adapted from My Diverse Kitchen

All purpose flour- 1 cup
Ghee / Clarified butter –  1/4 cup at room temperature
Icing sugar – 1/8 cup
Baking powder – 1/4 teaspoon
Salt- 1/8 teaspoon
Vanilla essence- 1/2 teaspoon
Glazed cherries- 5, chopped
Icing sugar to roll the cookies in

Take the flour, sugar, salt, baking powder in a bowl ind whisk. Add vainlla essence and sugar. Rub in the sugar so that the mixture and bring it together to form a dough. Add a few more teaspoons of ghee if needed. Do not use milk / water though.Take care not to over work the dough.The dough should hold together when pinched off.

Pinch out equal sized portions of the dough and roll between the palms.Place a piece of cherry on top but do not flatten the cookie.Place on parchment lined baking tray and refrigerate for 15 minutes.Meanwhile pre heat the oven. Now remove the tray from the fridge after 15 minutes and bake at 180 degree C for 15- 20 minutes / till the color just starts changing. To check for doneness, check the bottom of the cookie.It should be light brown like the one in the pic below.

While still hot, roll the cookies in icing sugar and let it cool. Roll / dust in icing sugar again once more if there are ‘bald’ spots if the sugar has melted due to the heat.

Serve / store in air tight containers…
