Last week we got the electricity bill! I was shocked to see the amount. I was wondering why the bill had rocketed and was searching for the reasons behind it.


Then it struck me that for the past 2 months I had baked a whole lot of goodies for Fire Up Your Oven–  Baking marathon.When I realized the reason, my mind was not as agitated as before. I was happy.I had baked some nice and healthy treats for the kids and they [and we too] enjoyed every bite of it. So it was worth the extra amount we paid for the bills, right!

Coming to today’s recipe, it is the final dish for this week’s theme – Surprise Inside Cakes.Here small cake balls are placed inside the batter and baked to get a polka dot pattern.

My initial plan was to make a 3 layered Polka Dot cake with a rich frosting. It later changed to Polka dot bundt cake and finally I made this loaf cake!!!

The kids liked this a lot. I had a tough time controlling the kids with the little cup cakes around. They took turns in giving me a cute smile.Charmed by the smiles, I would lose a couple of mini cupcakes! 

So you can use any number of polka dots in this cake but my sincere advice would be to make a huge batch of those as kids are sure to polish off a few before you set out to make the original cake!!

Now off to the recipe….

I used:
For the colorful Polka Dots:
Makes – 24 mini cupcakes

Whole wheat flour-3/4 cup
Yogurt-1/2 cup
Oil-1/4 cup
Sugar – 1/2 cup
Baking powder- 1/2 teaspoon
Baking soda- 1/4 teaspoon
Few drops of gel colors…

Sift the flour. Take the yogurt in a bowl and add sugar.Stir to dissolve.[I used powdered sugar].Add baking powder and baking soda and mix gently. Set aside for 5 minutes.

The mixture will froth up. Add oil ,mix. Add the flour and mix to combine but don’t over mix / beat the mixture.Line a mini cupcake tray with liners.

Divide the batter into 4 parts. Add a drop of gel color into each bowl and mix. Pour spoonfuls into the cupcake liners and bake in a pre heated oven @ 180 degree C for 10 minutes / till the cakes are done. Remove from oven and let it cool for a minute. Remove from the tray and cool on a wire rack. Once the cake is completely cool, remove the cake liners. Arrange the cakes in a box and refrigerate ours. I for a few hours. I left mine over night.

For the loaf cake:

Whole wheat flour-1 cup
All purpose flour- 1/2 cup
Yogurt-1 cup
Sugar- 1 cup
Oil- 1/2 cup
Baking powder- 1 teaspoon
Baking soda- 1/2 teaspoon

Sift the flour. Take the yogurt in a bowl and add sugar.Stir to
dissolve.Add baking powder and baking soda and
mix gently. Set aside for 5 minutes.

After the mixture froths up, add the oil and mix gently. Add the flour and mix to combine but take care not to over beat the mixture.

Pour a portion of the mixture into a loaf tin and arrange the polka dot balls,pressing them gently into the batter. Pour another part of the mixture to cover the polka dots.Repeat this till the batter is all used up.Bake in a pre heated oven @ 180 degrees for 45 minutes / till done. The oven timings will vary, so keep an eye out from 30 minutes….

Once done, remove the cake from the oven. When it cools, carefully remove the cake from the tin and let it cool on a wire rack. I drizzled some chocolate sauce and colorful sprinkles….

 Slice only after it cools down completely.
Note:
  • Refrigerate the polka dots as a precaution that they don’t rise up while getting baked. 
  • Though I used whole wheat flour in both the recipes, the cake was incredibly soft.
  • Use any colors for the polka dots and arrange them as you like to create different patterns within the cake.
  • You can use any base recipe and follow this idea.
  • This cake can also be baked in round tins/ as bundts.

  3. PJ after reading all your surprise bakes, I was thinking we should have a theme on this..sounds so exciting right!..this one seem so interesting as well!..lol on the bill..for a moment I thought you will be cursing me for selecting this theme!…hahahah..
