The next dish that I am going to present here today featuring Lotus seeds is this pulao. It is a very simple, no fuss dish. I made this for Lil Angel’s lunch box last week and she was happy with the taste. Later that night hubby too commented that he liked it! Now that is something right!

This pulao is my second dish for Blogging Marathon #50, Week 2, Day 1, with the theme -One ingredient 3 dishes.

 Lotus seeds are
highly  nutritious and have several beneficial properties. Check out the Lotus seeds post to know more about this ingredient and the other dishes that can be made using lotus seeds.

I used:

Basmati rice-1/2 cup
Lotus seeds-1/2 cup
Cumin seeds-1.2 teaspoon
Onion-1, sliced
Garlic-1/2 teaspoon, grated
Turmeric powder- a pinch
Pulao masala-1 teaspoon
Ghee- 1 teaspoon
Oil-1 teaspoon
Kauri methi-1/2 teaspoon,lightly crushed
Salt to taste

Soak Basmati rice for 10 minutes.Drain and pressure cook it like you normally do. I use the ratio 1: 1.5 [rice: water].Once the pressure releases, spread on a plate to cool.

Heat ghee in a pan and add the lotus seeds. Roast it till
crisp and the color changes to light brown. Remove from pan and keep
aside.

Heat oil in a pan and add the cumin seeds. When it splutters, add the onions d garlic anand saute till it onion turns brown.

Put in turmeric powder, and mix. Add pulao masala , rice ,salt and the roasted seeds and mix well. Bring down the flame to low and allow the flavors to blend.Add kasuri methi and mix. Remove from heat.

Serve with pappad/ crisps/ raita….
